  • 8 ounces whole wheat spaghetti (broken into thirds, I love Garofalo Organic Whole Wheat Italian Spaghetti)
  • 1 teaspoon salt (for pasta cooking water)
  • 3 teaspoons olive oil (depending on your pan)
  • 1/2 cup finely chopped onion
  • 2 tablespoons minced garlic (or less)
  • 1 package Italian turkey sausage (5 links - 1 1/2 lb. Sweet)
  • 3 cups pasta sauce (homemade or jarred, use the lowest sugar pasta sauce you can find if you're using sauce from a jar)
  • 2 cups low-fat cottage cheese
  • 2 eggs (beaten)
  • 1 teaspoon italian seasoning (a blend of dried basil, oregano, thyme, marjoram, and rosemary)
  • 1 1/2 cups low fat mozzarella (grated, or more, depending on how much comfort you need!)

    My husband doesn't like turkey sausage so, naturally, I substitute sausage he does enjoy. This is quick and easy and can be made ahead.
