6 zucchini (small)

Directions

1Preheat the oven to 230 degrees Celsius.
2Spray a baking sheet with cooking spray.
3Cut the zucchinis in half. Scoop out a bit of the pulp from each half.
4Rub some vegetable oil on both sides of each zucchini and then fill the hollow part of the zucchini with cheese and sun-dried tomato on top.
5Place the zucchini on the baking sheet and season with black pepper. Place the baking sheet in the oven and bake for 15 minutes.
6Remove the baking sheet from the oven. Season with salt and allow to cool for 5 minutes before serving.
