Ingredients

  • 1 egg white
  • salt
  • ground black pepper
  • 3 zucchini (depends on the amount of people, cut length-wise in 4 pieces)
  • bread (Grated, to taste)
  • 2 tablespoons parmesan cheese
  • parsley (finely chopped)
  • garlic powder (to taste)
  • olive oil

Directions

  1. Preheat oven to 200 degrees Celsius.
  2. In a small bowl, beat egg whites, and season with salt and pepper.
  3. Dip the zucchini sticks in the mix.
  4. Pour the bread crumbs, cheese, parsley, and garlic powder in a ziplock bag, mix well.
  5. Grease a baking pan with olive oil, and set aside.
  6. Place drained zucchini strips in the bag, and shake hard so that they are well breaded.
  7. Place zucchini on baking tray in a single layer, and bake for 20 to 25 minutes, or until brown.
  8. Serve with ketchup.

I love fried zucchini and did not think baked could as good, but I was wrong. I am so glad I tried this recipe. I was looking for something a little healthier and these really hit the spot. They got super crispy in the oven without all of the grease from deep frying. I made a huge batch and served them with lots of options for dipping - ketchup, sour cream dip, spicy mustard and chili sauce. I will be making these for all of our parties.
