These Baked Sweet Potatoes Stuffed with Smoked Salmon, Tuna and Corn are just the thing you might need. However, they take some time to make, so make sure you have the time to prepare. Ingredients

  • sweet potato (as needed)
  • 1 can corn
  • smoked salmon (slices)
  • 3 cans tuna (well drained)
  • 2 tablespoons parsley (chopped)
  • 4 eggs (lightly beaten)
  • grated cheese (to taste)

Directions

  1. Preheat oven to 190 degrees Celsius.
  2. Place the potatoes in a baking tray, and bake for 50 to 60 minutes, until soft.
  3. Remove from oven, and when they are cool enough to pick up, cut them in half horizontally.
  4. Remove the inside of the potatoes, but leave about 1 inch in the shell.
  5. With a fork mash the sweet potato, and add to it the corn, tuna, shredded salmon, and chopped parsley.
  6. Beat the eggs, and season with salt and pepper. Add to the mash, and mix well.
  7. Put the peels of the sweet potato in a baking tray.
  8. Put the mixture into the sweet potato shells, and sprinkle with cheese on top.
  9. Bake for 25 minutes until golden
  10. Serve with a green salad, or steamed vegetables.
