  • 1/4 cup self rising flour
  • 1 tablespoon granulated sugar
  • 3 eggs
  • 3/4 cup milk
  • 2 tablespoons honey
  • 1 pint strawberries (small, hulled)
  • powdered sugar (to dust)

Directions

  1. Preheat the oven to 400°F. Mix flour and granulated sugar in a large bowl. Whisk eggs and milk in a medium bowl. Add to dry ingredients and whisk to form a smooth batter.
  2. Heat honey in a 9-inch ovenproof skillet on high heat until bubbling. Reduce heat to medium. Add batter and cook for 2 mins, until bottom sets. Press strawberries into batter.
  3. Bake for 10-12 mins, until batter is puffed and golden. Slide pancake onto a platter. Dust with powdered sugar. Cut into wedges and serve.
