So delicious! I melted the Parmesan cheese in coconut milk (the white one) then added grated Parmesan on top for that extra cheese. I also used cayenne pepper to season for extra spice (I’m a Jamaican you know we love the spice) Paired it with some mashed potato and seamed veggies! Finga Lickin!

this was a delicious, quick and easy dish to make.. i used spinach instead of parsley, which worked beautifully. i paied it with rice and cauliflower and my kids ate it all up!

I used a very thick slab of salmon and so it took longer. I also squeezed fresh lemon on the salmon and in the mix. Mmmmmmmm

Taste was good, but the fish was terribly dry. Perhaps because I had frozen the filet prior to making it (Costco, you know?), or perhaps I should have smothered it in butter beforehand.
