This rustic rice dish is bursting with tons of flavor. From the delicate quail eggs and the wild mushrooms to the earthy and bold thyme, this dish has everything. Ingredients

  • 1 tablespoon vegetable oil
  • 1 onions (finely chopped)
  • 1 leeks (finely chopped)
  • 8 wild mushrooms (cleaned, trimmed and diced)
  • salt
  • ground black pepper
  • 1 tablespoon tomato purée
  • 200 grams rice
  • 1 liter vegetable broth
  • 2 quail (in pieces)
  • fresh thyme

Directions

  1. 1Preheat the oven to 180 degrees Celsius.
  2. 2Add the oil to a saucepan on medium heat. Saute the onion and leek for 5 minutes.
  3. 3Add the mushrooms, season with a pinch of salt and black pepper and cook for 5 minutes.
  4. 4Add the tomato puree and rice, stir and cook for a couple of minutes.
  5. 5Add the broth. Stir and bring to a simmer.
  6. 6Season the quail in pieces with salt and black pepper and place in the saucepan.
  7. 7Sprinkle thyme on top and bake for 20 minutes or until the broth has evaporated.
  8. 8Let it rest for 10 minutes and serve.
