Ingredients

  • cooked rice (as needed)
  • 1 package mozzarella cheese (grated)
  • vegetables (to taste, savoy cabbage, zucchini, carrots, and leek)
  • 1 onion (chopped)
  • 1 garlic clove (chopped)
  • parsley (chopped)
  • 2 eggs
  • 1 cup milk
  • 1 cottage cheese (mashed)
  • salt (to taste)
  • ground black pepper (to taste)
  • eggs (to place on top)

Directions

  1. Preheat oven to 200 degrees Celsius.
  2. Saute the vegetables of your choice in a pan with the olive oil, onion, garlic, and parsley. Remove from heat, and mix in Mozzarella cheese.
  3. In a bowl, mix the rice with vegetables and cheese mixture.
  4. Grease a baking tray with butter, and pour the rice in it.
  5. Beat eggs with milk, cottage cheese, salt, and pepper.
  6. Pour this mixture on top of the rice, and bake for 30 minutes.
  7. Serve immediately.

This recipe was so tasteful I cant wait to do it again; very do-able and understandable directions. This 5 star recipe kept the rice moist and the vegetables tender; while the eggs stayed fluffy. Entire dish was very fulfilling.
