Ingredients

  • 2 cups milk
  • 1/2 cup heavy cream
  • 3 eggs
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup cooked rice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Directions

  1. Preheat the oven to 350°F. Place four 1-cup ovenproof dishes on a large baking pan.
  2. Whisk milk, cream, eggs, sugar and vanilla in a large bowl until well combined. Stir in rice and cinnamon. Pour mixture evenly into dishes. Add enough boiling water to baking pan to come halfway up sides of the dishes. Sprinkle custards with nutmeg.
  3. Bake 45-50 mins, or until custards are just set. Serve warm or cold.
