Baked Potatoes with Chorizo and Rioja Wine

Ingredients

  • 4 baking potatoes (about 1/2 lb each)
  • 3 tablespoons olive oil
  • 2 teaspoons salt (flakes)
  • 2 onions (medium, peeled and cut into thin wedges)
  • 2/3 pound chorizo sausages (small, sliced)
  • 1/2 cup red wine (Rioja)

Directions

  1. Preheat oven to 400°F. Rub potatoes with 1 tbsp olive oil and arrange on a baking sheet. Sprinkle with salt flakes. Bake 45 mins-1 hour, until golden, crisp and soft in the center.
  2. For the topping, heat 1 tbsp oil in a pan and cook onion over high heat 2 mins. Add the chorizo and cook 2-3 more mins until lightly browned. Add the wine and season. Boil rapidly 1 min until the wine has reduced by half.
  3. Split the potatoes open and drizzle with the remaining olive oil. Top with the hot chorizo and onions to serve.
