Comfort food 101. I did divert from the recipe though. ;) First, I started with aromatics by sauteing 1/2 diced yellow onion, 1 rib celery diced, 2 cloves garlic minced ib 1 tbsp butter. I roasted 3 large skinless chicken thighs on a sheet pan at 400 F on the lower rack. I layed a large sprig of rosemary across the pan and arranged the thighs on top before roasting. I cooked 6 rashers of bacon in the oven on the top rack along with the chicken. Lastly, I tossed the broccoli in the residule bacon fat on the bacon sheet pan and roasted it in the oven. I left out the paprika, added 2 extra tbsp butter and used the entire container of sour cream. Other than that, I followed the recipe.

This recipe just needs more flavor but the overall idea is good. We added more garlic, more salt and pepper, smoky paprika, and a bit of garlic salt.

As is, I wouldn't make this again without trying to modify. I think 1 cup sour cream is too much considering how much butter is being used. it makes the potatoes too mushy and ruins the texture.
