Ingredients

6 portabello mushroom (large, or 8 large ones)
1/2 cup olive oil
3 tablespoons balsamic vinegar (plus 1)
3 cloves garlic (minced)
1 cup manchego cheese (shredded, may substitute other soft cheese such as a mild cheddar or colby)
1/2 cup parmesan cheese (grated)
3/4 cup bread crumbs
1 tablespoon oregano
1/2 cup scallions (minced)
1/2 teaspoon salt
1 teaspoon beef bouillon (optional)
1/2 stick butter

Directions

1Mix the olive oil, 3 tbsps. of balsamic vinegar and 1 clove minced garlic in a bowl.
2Rinse the mushrooms and pour the olive oil mixture over them. Set aside for 15 minutes in the bowl.
3Meanwhile, preheat the oven to 200 C and mix the rest of the ingredients together in a separate bowl to make the filling.
4Spoon the filling into the mushrooms.
5Place the mushrooms into a baking dish (with the filling facing up) and bake for 5-7 minutes, until the cheese melts and the edges brown.
