  • 1,800 perch (2000 g whole, cleaned and scaled)
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • stuffing (Herb)
  • 20 grams butter
  • 1/2 onion (finely chopped)
  • 2 teaspoons lemon rind (finely grated)
  • 2 tablespoons fresh parsley (chopped)
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh dill
  • 1 cup breadcrumbs
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • baked potatoes
  • 700 grams potatoes (peeled and thickly sliced)
  • 2 tablespoons olive oil
  • 1/3 cup stuffing (herb)

    Directions

    1. Immerse the whole perch in a sink of cold water and remove any remaining scales. With scissors or a sharp knife remove any blood or dark skin from the belly cavity of the fish and trim the fins. Rinse the fish and pat dry with paper towels.
    2. Cut three slashes, each 1 cm deep, into the thickest part of the fish on both sides. Brush them with olive oil and season with salt and pepper.
    3. To make the herb stuffing, sauté onion in butter until soft and translucent. Remove from the heat and transfer to a mixing bowl.
