  • 3 cups flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1 1/2 pounds ricotta cheese (drained)
  • 2 eggs
  • 1/2 cup grated Parmesan cheese (freshly)
  • tomato sauce (Your favorite)

    Directions

    1. DOUGH: Beat the eggs, add flour, milk and salt and blend well. Drop 1 tablespoon of this batter onto a heated griddle and cook lightly on both sides until golden and set, like a small pancake. Continue until batter is used up.
    2. FILLING: Blend cheeses and eggs for the filling. Place 1 teaspoon or more filling on each manicotti pancake and roll up. Place in a baking dish and spoon warm tomato sauce over each roll. Bake in a 350 degree oven for 30 minutes. Serves 4-6.
