Ingredients

  • 2 onions (peeled and finely diced)
  • 125 grams gouda cheese (grated)
  • 500 grams macaroni
  • 215 grams jalapeños (sliced ​​, drained)
  • 50 grams butter
  • 50 grams plain flour
  • 750 milliliters milk
  • 1 1/2 teaspoons hot mustard (medium)
  • 125 grams carrots (peeled and cut into thin strips)
  • 1 green peppers (each small red, yellow and, seeded and chopped finely)
  • 150 grams radishes (sliced)
  • 1/2 cucumber (sliced)
  • 1/2 lettuce (leafy)
  • 7 tablespoons balsamic vinegar (light)
  • 1 pinch sugar
  • 3 tablespoons olive oil

Directions

  1. Preheat the oven to 325°F. Grease a baking dish. Cook the pasta in boiling salted water according to package directions. Drain and set aside.
  2. Meanwhile, melt the butter in a pan and sauté the onions until soft. Add the flour and stir well. Gradually pour in the milk and bring to a boil, stirring constantly. Simmer for 3-4 mins then melt 2-3 tbsp of cheese into the sauce, add the mustard and season to taste. Add the drained macaroni and ​​jalapeños. Put the mixture into the prepared dish, sprinkle with the remaining cheese and bake for about 20 mins.
  3. To finish, mix the vinegar and sugar and season to taste. Drizzle in the oil and mix well. Toss with the remaining ingredients and serve in bowls with the macaroni and cheese.
