I was weary using this recipe ....I love egg plant but can’t stand the mushy oily recipes ....this was great ...I did add some mozzarella cheese at the end to each slice.....I will make this again 😊

Made these tonight for dinner. I made as directed except I added some Parmesan to the bread crumbs. I baked about 40 min total. Towards the end, I sprinkled some shredded mozzarella on top and baked until melted. I heated up some spaghetti sauce to put over top....delicious!

Not really sure what I did wrong with it. It did not come out like the picture so, I’m thinking, that I didn’t put enough olive oil on the tops of them. Other than not looking exactly like the picture the flavor was great! Definitely make it again

Crispy and delicious. I would definitely make this again. I used Panko breadcrumbs because that is what I had in the house which was wonderful once I added a bit of basil. I used two eggs for a large eggplant.
