And don’t worry about going back for seconds, this meal is so low in calories, you might even go back for third helpings!

Ingredients

  • 4 slices codfish (Lusomar)
  • 3 garlic cloves (sliced)
  • 1 teaspoon chili (Suldouro sweet)
  • 1 teaspoon pink peppercorns
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon orange peel (grated or minced)
  • 3 tablespoons orange juice
  • 1 teaspoon ginger powder
  • 2 sun-dried tomatoes (in strips)
  • 2 sprigs parsley (chopped)
  • olive oil (for garnish)

Directions

  1. Preheat oven to 220 degrees Celsius.
  2. Place each one of the cod slices on a square of parchment paper.
  3. Mix all the remaining ingredients, and pour mixture on each piece of cod.
  4. Sprinkle each slice with olive oil.
  5. Close the parchment paper and then wrap each slice in aluminum foil.
  6. Bake at 220 C, for 20 to 25 minutes.
  7. Serve immediately with baked potatoes.

The cod in this 4 star recipe was nicely cooked without over drying and had plenty of flavor that masked that fishy taste often found in cod. The baked potatoes were so delicious I couldn't stop eating it. Cant wait to make it for my family again soon.
