  • 1 inch beef
  • 5 pounds buffalo
  • 1 green bell pepper (diced)
  • 1 red bell pepper (diced)
  • 3 spanish onions (coarsely chopped)
  • 3 tablespoons fresh cilantro (minced)
  • 6 chipotle peppers (minced)
  • 6 hot chile peppers (*, seeded & chopped)
  • 56 ounces diced tomatoes (drained)
  • 8 garlic (crushed or minced)
  • 15 ounces tomato sauce
  • 1 can beef broth
  • 2 tablespoons worcestershire sauce
  • 8 tablespoons chili powder (or to taste)
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon sugar
  • 2 tablespoons ground cumin
  • 1 teaspoon marjoram leaves (dried)
  • 1 tablespoon oregano leaves (dried Mexican)
  • 2 tablespoons masa harina
  • 3 tablespoons thickener (tapioca)

    Directions

    1. Preheat oven to 250 F. Place beef, peppers and other vegetables in large Dutch oven or enameled roasting pan, and mix together (do not brown meat).
    2. Thoroughly blend seasoning mix ingredients together in a bowl (mixer or blender recommended). Pour Seasoning Mix over ingredients in Dutch oven/roasting pan and mix well. Cover and place pan in oven. Cook for 5 to 6 hours or until beef is tender and sauce has thickened.
