Ingredients

  • 3 ounces spinach (dried, and ricotta tortellini)
  • 1 egg
  • 1/2 cup heavy cream
  • 1/3 cup parmesan cheese (finely grated)
  • 1 1/2 ounces cooked chicken (finely sliced)
  • chives (to garnish)
  • 1 spring onion (finely chopped, to garnish)

Directions

  1. Preheat the oven to 350°F. Boil the tortellini in salted water for about 12 mins. Meanwhile, beat the egg in a bowl, stir in the cream and add the parmesan. Season. Drain the tortellini, and place in a baking dish. Distribute the chicken slices evenly around the pasta, then pour the creamy cheese mixture over top. Bake for 15 mins. To serve, garnish with the chives and chopped spring onion.
