Ingredients

  • 4 boneless skinless chicken breasts (very large)
  • 2 tablespoons mayonnaise (regular or light mayo will work)
  • 2 tablespoons dijon mustard (or use any mustard that appeals to you)
  • 1 tablespoon Balsamico Bianco (or use slightly less than 1 T white vinegar)
  • 1 tablespoon water
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon poultry seasoning
  • 4 tablespoons parmesan cheese (freshly grated or coarsely grated, not the kind that comes in a can)
  • 1 cup almond flour (or almond meal, You can also grind 3/4 cup almonds in the food processor, but it can be tricky to get it finely ground without turning it into almond butter!)
  • 1/4 teaspoon poultry seasoning
  • salt
  • ground black pepper
