Ingredients

  • 1 whole chicken (cut into steaks)
  • salt (to taste)
  • ground black pepper (to taste)
  • 1 teaspoon garlic powder (spoon)
  • 3 bay leaves (halved without string)
  • 1 lemon juice (small)
  • 100 grams breadcrumbs
  • 1 teaspoon coriander powder
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1 large egg (extra)
  • olive oil (as needed)

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Season the steaks with salt, pepper, garlic, bay leaves, and lemon juice.
  3. Let the chicken absorb the flavor for a few minutes, then dry slightly with a paper towel.
  4. In a deep dish, mix the breadcrumbs, coriander, paprika, and parsley.
  5. In another dish, beat the egg.
  6. First, coat the chicken in the egg, and then in the breadcrumbs.
  7. Place chicken on a baking tray lined with parchment paper.

This recipe says to serve this chicken warm, hot or even cold. I agree! We serve it hot with sides or on a bun as a hot or cold chicken sandwich. I also slice it while cold and lay across the top of salads.
