Baked Apples with Cinnamon Ricotta

Ingredients

  • 6 1/2 tablespoons unsalted butter
  • 1/3 cup raisins
  • 6 granny smith apples (cored)
  • 6 cinnamon sticks
  • 1/2 cup maple syrup
  • ricotta (Cinnamon)
  • 7 ounces ricotta cheese
  • 2 tablespoons heavy cream
  • 2 teaspoons maple syrup
  • 1/4 teaspoon cinnamon

Directions

  1. Preheat oven to 350°F.
  2. Combine 3 1/2 tbsp butter with raisins. Stuff into apple cores then push a cinnamon stick into each core. Transfer to a baking dish and drizzle with maple syrup. Dot remaining butter on top and bake for 30 mins, until golden and tender.
  3. Meanwhile, to make the cinnamon ricotta, combine all ingredients and beat until smooth. Serve with apples and baking juices drizzled over.
