Ingredients

  • loins (Hake)
  • 1 lemon
  • spices (Fish seasoning, pepper, ginger, fennel, coriander seeds)
  • olive oil (to taste)
  • 1 onion (thinly sliced)
  • 2 garlic cloves (chopped)
  • 1 leek (thinly sliced)
  • 1 carrot (grated)
  • 200 milliliters cream
  • sauce
  • 200 milliliters bechamel
  • breadcrumbs (to taste)
  • grated cheese (to taste)

Directions

  1. Preheat oven to 180 degrees Celsius.
  2. Season the hake loins with lemon and spices (pepper, ginger, fennel, and coriander seeds).
  3. Heat the olive oil in a skillet, and saute the onion and garlic.
  4. Add the leek, carrot, and a little white wine, and let it cook a bit.
  5. Mix the cream with the white sauce.
  6. Cover the bottom of the baking dish with the fish, add the vegetables, and cover with the white sauce.
  7. Sprinkle with breadcrumbs and grated cheese, and bake to gratin.
  8. Serve with a salad.

This baked hake recipe was nothing less than 4 stars and I will try it a second time soon. The hake remained very moist and flaked apart easily; while the vegetables were steamy. The white sauce put and even layer of coating across all the ingredients.
