  • 6 flour tortillas (medium-sized)
  • 6 white corn tortillas (medium to small)
  • 2 limes (fresh)
  • 1/2 cup queso blanco (crumbled)
  • oil (for frying)
  • 1/2 lettuce (a small head of, finely shredded)
  • 4 baby carrots (sweet, finely grated)
  • 1/2 red onion (a small, or about 3 – 4, 1/4″ thick slices small diced)
  • 3/4 cup sour cream (thick)
  • 2 tablespoons chipotle peppers in adobo sauce
  • 2 teaspoons adobo sauce (from the can, only add if you like it extra hot)
  • 1 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon creole seasoning (Cajun’s Choice)
  • 1/4 teaspoon white pepper
  • 1/8 teaspoon garlic powder
  • 1/16 teaspoon onion powder
  • 1 cup light beer (or dark, regular)
