Description

Creamy and frozen, this recipe for Bailey's Popsicles make the perfect adult treat on a hot summer evening. Made with a mixture of milk and cream, these popsicles are lightly flavored with vanilla to complement the addition of Bailey's to the popsicle mixture. Pour into molds and freeze. Store these popsicles in a place where curious little hands cannot find them as they are not kid friendly. If you do not have Bailey's you can make these popsicles with another cream liqueur.

Ingredients

350 grams whole milk
180 grams whipping cream
100 grams evaporated milk
90 grams cream (Baileys or other Irish)
2 teaspoons corn starch
1 vanilla beans
1 pinch salt

Directions

1Whisk the cornstarch into the milk. Add to a saucepan with the cream, evaporated milk, and Baileys. Bring to a boil and stir constantly until thickened. Set aside to cool.
2Mix the Baileys mixture well and pour into popsicle molds. Place into the freezer.
3When slightly hardened, place a popsicle stick into each mold. Place in the freezer until completely frozen.
