It seems you can’t get those sweet Indian cakes out of your mind since you tasted them at the local restaurant. If you want to savor them from the comforts of your own home, then try this recipe for Badam Barfi (Indian Almond Cakes). This recipe combines savory cardamom with almonds, pistachios in a cake that is out of this world. Make sure to cut them into diamond shapes before they completely harden after baking.
- 1 liter milk
- 150 grams sugar
- 185 grams ground almond
- 1 pinch ground cardamom
- cardamom seeds
- 2 tablespoons unsalted pistachios
- Boil the milk in a saucepan over high heat while stirring until it begins to thicken. Add the sugar, dissolve it and cook for 10 minutes, stirring constantly. Add the ground almonds and cook while continuing to stir constantly until the dough forms a ball that no longer sticks to the edges of the pan. This takes at least 25 minutes. Remove from the heat. Add the ground cardamom and stir.
- Pour the dough onto a silicone baking mat and smooth the surface with the back of a spoon. Allow the surface to cool, then score the surface with diamond-shaped cuts. Decorate with cardamom seeds and pistachios.
- Completely cut the dough into diamond shapes before it is completely hard.
