These savory muffins have diced bacon, fresh oregano, and grated cheese mixed into the batter. They are obviously great at breakfast, either as a grab and go option on their own or with scrambled eggs (or poached, as you like them), and can be frozen after baking and quickly reheated to serve. They are also great crumbled into salads or soups, or as a side kick for chicken, pork, or fish.

Ingredients

  • 150 grams bacon
  • 175 grams flour
  • 8 grams baking powder
  • salt
  • ground black pepper
  • 2 eggs
  • 90 grams butter (melted and cooled)
  • 200 milliliters milk
  • 1 teaspoon oregano
  • 100 grams cheese (choice, grated)

Directions

  1. Preheat the oven to 190 degrees Celsius.
  2. Microwave the bacon a few minutes until crunchy.
  3. In a large bowl, sift together the flour, baking powder, and a pinch of salt and pepper.
  4. In another bowl, whisk together the eggs, melted butter, and milk.
  5. Add the wet ingredients to the dry and mix together until just combined. Do not overmix.
  6. Add the bacon, oregano, and almost all of the shredded cheese. Reserve a little cheese to sprinkle over the top of each muffin.
  7. Fill the muffin tins and sprinkle a little cheese on top of each muffin.
  8. Bake for 25 minutes.

I never heard of a bacon and cheese oregano muffin until I tried this recipe. How great this was to make and to eat. You could really taste the bacon and cheese and it was a very dense muffin. Looking forward to making these 5 star delights again.
