Toatsed hazelnuts, bacon and onion lend ample flavor to this savory "cake," a, easy-to-prepare, bread-like loaf that's finished with onion slivers for added oomph. Like most savory breads, it'd be a great addition to a cheese and bread plate, spread with butter or mostarda or even used to make crunchy croutons for soup. Whatever you do, be sure to wash it down with a pint of dark beer.

Ingredients

  • hazelnuts (chopped)
  • 2 eggs
  • 100 milliliters whole milk
  • 130 milliliters extra-virgin olive oil
  • 150 grams flour
  • 1 teaspoon baking powder
  • 50 grams pecorino cheese (grated)
  • ground black pepper
  • salt
  • 100 grams smoked bacon (diced)
  • 1 onion (peeled and sliced)

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a nonstick pan, toast a handful of hazelnuts.
  3. In a bowl, mix the eggs, milk, and oil.
  4. In a separate bowl, mix the flour, baking powder, cheese, and a pinch of black pepper.
  5. Add the wet ingredients to dry ingredients. Season with a pinch of salt and add the hazelnuts, bacon and onion, setting a little of the sliced onion aside.
  6. Grease and flour a loaf pan. Pour in the mixture and sprinkle the remaining onion on top.
  7. Bake for 20 to 25 minutes. Test with a toothpick.

Bacon, cheese and onion is always a winning combination! This savory cake or bread went together quickly and sliced with ease. I served it with a side of scrambled eggs and fresh orange juice. The meat and the toast were already there!
