Description

Toatsed hazelnuts, bacon and onion lend ample flavor to this savory "cake," a, easy-to-prepare, bread-like loaf that's finished with onion slivers for added oomph. Like most savory breads, it'd be a great addition to a cheese and bread plate, spread with butter or mostarda or even used to make crunchy croutons for soup. Whatever you do, be sure to wash it down with a pint of dark beer.

Ingredients

hazelnuts (chopped)
2 eggs
100 milliliters whole milk
130 milliliters extra-virgin olive oil
150 grams flour
1 teaspoon baking powder
50 grams pecorino cheese (grated)
ground black pepper
salt
100 grams smoked bacon (diced)
1 onions (peeled and sliced)

Directions

1Preheat the oven to 180 degrees Celsius.
2In a nonstick pan, toast a handful of hazelnuts.
3In a bowl, mix the eggs, milk, and oil.
4In a separate bowl, mix the flour, baking powder, cheese, and a pinch of black pepper.
5Add the wet ingredients to dry ingredients. Season with a pinch of salt and add the hazelnuts, bacon and onion, setting a little of the sliced onion aside.
6Grease and flour a loaf pan. Pour in the mixture and sprinkle the remaining onion on top.
7Bake for 20 to 25 minutes. Test with a toothpick.
