Description

Stippled with toasted hazelnuts, bacon and brine-y black olives, this loaf gets an umami blast from the addition of Parmesan in the dough. Meant to be served warm — perhaps with butter sprinkled with finishing salt for spreading on slices — the biscuit-like bread bakes for about 30 minutes, leaving you with just enough time to sip a pint of beer and assemble a cheese and charcuterie plate to serve alongside.

Ingredients

  • 50 grams hazelnuts
  • 200 grams flour
  • 2 eggs
  • 50 grams extra-virgin olive oil
  • 150 grams milk
  • 8 grams baking powder
  • 50 grams parmesan cheese (grated)
  • salt
  • 100 grams bacon (diced)
  • 100 grams black olives (pitted and chopped)

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Toast the hazelnuts and chop roughly.
  3. Mix the flour, eggs, oil, milk, baking powder, cheese, and and a pinch of salt until smooth.
  4. Add the bacon, olives, and hazelnuts.
  5. Pour the mixture into a greased and floured loaf pan.
  6. Cook for 35 minutes. Test with a clean knife or toothpick.
  7. Serve warm.
