In order to make this quiche vegetarian friendly, substitute the bacon for mushrooms or another vegetable.

Ingredients

  • 200 grams flour
  • 1 pinch salt
  • 100 grams butter
  • 2 leeks (diced)
  • 1/2 green pepper (diced)
  • 150 grams bacon (chopped)
  • 1/2 onions (diced)
  • 3 eggs
  • 150 milliliters milk
  • cheese (such as gouda, grated)
  • olive oil

Directions

  1. 1Preheat the oven to 200 Celsius.
  2. 2Cut the butter into the flour and salt and add 3-4 tbsps. of cold water. Form into a ball and refrigerate for 30 minutes.
  3. 3Saute the onion, pepper, and leek in a little olive oil for 5 minutes. Add the bacon and cook for 2 minutes more.
  4. 4Roll the dough out into a circle and place into a pie plate. Crimp or pinch the edges and prick all over with a fork.
  5. 5Place the vegetable filling into the pie plate.
  6. 6Whisk the milk with the eggs, season with salt and pepper, and pour over the filling. Sprinkle with the grated cheese and bake for 45 minutes.
