Coincidentally, I'd just eaten my variation on this theme when Yummly threw up this suggestion in my email! We used to use streaky bacon - that's the UK term anyway, meaning the bacon from the pig's belly, which is marbled with fat. Then we discovered that Parma Ham, a lot less fatty and needing no pre-cooking, is a great substitute, and it crisps up beautifully too. Either way, the chicken stays really moist. If you like a stronger flavour, goat's cheese goes really well.
