  • 1/4 cup water (for dough)
  • 6 large eggs
  • 3 tablespoons sugar (for dough)
  • 1 tablespoon lemon zest
  • 2 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 12 tablespoons unsalted butter (softened)
  • 1 cup sugar (for syrup)
  • 1 cup water (for syrup)
  • 1 teaspoon vanilla extract
  • 1/2 cup dark rum
  • 1/4 cup apricot jam
  • 1/4 cup water (for glaze)

    Directions

    1. In a microwave-safe bowl, heat water in 30-second increments until warm to the touch. Remove from microwave. Sprinkle yeast over water and set aside while yeast activates.
    2. In the bowl of a stand mixer fitted with a paddle attachment, mix eggs, sugar, and lemon zest together.
    3. Add the flour and salt to the bowl. Pour in yeast mixture, then mix on medium speed. Scrape down sides of bowl if necessary.
