  • rice wine (shao xing - 1/2 cup, can exchange with dry sherry if do not have rice wine)
  • 2 tablespoons sauce (if you are not gluten sensitive dark soya, is great to use)
  • 1 tablespoon orange zest
  • 1 tablespoon ginger
  • 3 cloves (crushed and minced)
  • 2 tablespoons olive oil
  • salt (to taste)
  • szechuan peppercorns (ground - 1 teaspoon, if you do not have just exchange with white or black peppers but I love the thumb numbing sensation of the Szechuan peppercorns)
  • 1 oolong tea
  • 1/2 cup long-grain rice (Jasmine, or other rice as desired, do not use instant rice)
  • 3/4 cup brown sugar
  • 6 slices orange peel
  • 6 star anise
  • 4 cinnamon
  • 1/2 cup honey
  • 3 centimeters ginger (inch, knob grated- 1 heaping tablespoon, 1 teaspoon freshly grated, 1teaspoon ground)
  • 1/2 cup sauce
  • 1 teaspoon sesame oil
