  • 1 red pepper (small, chopped)
  • 1 red onion (medium, cut into wedges)
  • cooking oil (spray)
  • 2 1/3 cups flour
  • 3/4 cup flour
  • 2/3 cup low fat milk
  • 3 teaspoons vegetable oil
  • 3 ounces tomato pasta sauce
  • 1/3 pound ham (chopped)
  • 1/3 pound chicken breast (shaved, chopped)
  • 1/4 cup barbecue sauce
  • 2 tablespoons pitted black olives (sliced)
  • 5 ounces ricotta cheese
  • 3 ounces mozzarella cheese

Directions

  1. Preheat oven to 450°F. Place pepper and onion in a roasting pan. Spray with oil, toss to coat and bake for 12-15 mins, or until tender.
  2. For the crusts, line 2 baking sheets with parchment paper. While vegetables are roasting combine flours in a bowl. Add milk, 1 cup water and oil. Using hands, mix to form a smooth dough. Divide in half and roll out each half into a 10 inch round. Place on prepared baking sheets and bake 5 mins, or until light golden, then remove from oven.
  3. Top crusts with tomato sauce, roasted vegetables, ham and chicken. Drizzle with barbecue sauce and top with olives and cheeses. Bake for 12-15 mins, or until cheese is melted and golden.
