  • 1 poblano pepper (large, cored, seeded and chopped)
  • 8 oz. tomato sauce
  • 10 oz. diced tomatoes (with green chills)
  • 1/3 cup molasses
  • 1/4 cup ketchup
  • 1 tsp. smoked paprika
  • 1 tsp. celery salt
  • 1 tsp. cumin
  • 1 tsp. onion powder
  • 2 Tbsp. cider vinegar
  • 1 cup water (more if needed)
  • 2 Tbsp. olive oil
  • 5 cups onions (thinly sliced)
  • 1 Tbsp. cider vinegar
  • 1 Tbsp. tomato paste
  • 1 Tbsp. honey
  • 1/2 cup water
  • 1 dash cayenne pepper (to taste)
  • 1/2 cup cider vinegar
  • 1/4 cup sugar
  • 1 tsp. onion powder
  • 1/4 cup olive oil
  • 1/2 head red cabbage (cored and shredded)
  • 1/4 cup chopped cilantro

    Directions

    1. Preheat oven to 325 degrees.
    2. Trim the brisket of fat, leaving just a thin layer. Season the brisket with the salt and pepper.
    3. Heat the oil in a KitchenAid® Professional Cast Iron Casserole to medium high heat. Sear brisket on both sides. Reduce the heat to medium, and remove brisket.
