This Baja Chicken Breast is easy, super quick to make, and delicious! This is a fun festive entrée for any day of the week.
Ingredients

- 4 chicken breasts (defrosted and deboned)
- 1/4 red bell pepper (thin sliced)
- 1/4 yellow bell pepper (thin sliced)
- 1/2 onion (diced)
- 4 slices provolone cheese
- 1 tsp. red pepper flakes
- 1/2 tsp. cumin
- 1/4 tsp. salt (& pepper)
- 1 Tbsp. avocado oil

Directions
- Add the avocado oil to your large frying pan and bring up to heat.
- Add onions and bell peppers and saute for two minutes.
- Add chicken breasts, sprinkle with cumin, salt & Pepper and red pepper flakes.
