Made a layered lasagna instead. Doubled the avocado mix and layered with sauce. Added more grape tomatoes than suggested and cut them into little slices. Sooooooo good!

It was very yummy! I added coriander instead of parsley and also put mushroom, red bell pepper and pesto into the mix. It would be good to have some guidance on how long to boil the lasagna sheets for. Also you may want to make some salad or garlic bread to bulk the dish up a bit!

As another suggested, I used macaroni because I didn’t have enough lasagna noodles. The avocado mixture was really good. Definitely making again! Will make with lasagna noodles next time

This was really tasty. i intended to use some precooked lasagna noodles, but they had spoilt, so i used some elbow mac and stirred it all together in a casserole dish. I doubled the spinach, added coarsely chopped mushrooms & increased the sauce all because I changed the pasta. My entire family loved this dish. So, introducing the Avocatta Casserole...

The lasagna rolls were actually pretty good. I had to add broccoli and kale to give it a little texture. I also used butternut squash sauce since I didn’t have marinara sauce. It was more tasty than I thought.

We loved this! We're not vegan, so I used regular parm, but my meatless Monday meal went smashingly with this recipe. I wouldn't change a thing, other than doubling the recipe and serving everyone 2 rolls, just to get a few more calories in for my growing kid, who declared it "awesome, mom."

AMAZING!! NEPHEWS EVEN LIKED IT!! note if you double the recipe keep only two avocados and use a potato smasher to smash and mix for a great texture

I used a homemade marinara sauce and jumbo shells instead of lasagna noodles. I also left out the parsley and replaced dried basil with fresh. It turned out delicious--I'll definitely make this again!
