Ingredients

  • 1/2 carrot (peeled and chopped)
  • 1 tablespoon onion (minced)
  • 1/4 cup green bell pepper (minced)
  • 1 lemon
  • 1 teaspoon light mayonnaise
  • 1 chile pepper (arbol)
  • 5 ounces canned tuna (drained)
  • salt
  • ground black pepper
  • 1 avocado (ripe, pitted and cut in half)

Directions

  1. In a bowl, add the carrot, onion, bell pepper, lemon juice, mayonnaise, chile pepper, tuna, and a pinch of salt and black pepper. Mix well.
  2. Cover the bowl with plastic wrap. Let the bowl sit in the refrigerator for one hour.
  3. Scoop out a small portion of avocado from each half, add the tuna salad to each avocado half.

I thought this recipe was truly unique and after making it I will never go back to eating regular tuna salad again. The tuna salad really didn't have that strong fish taste like most salads do and the avocado really added a whole new taste to it. I greatly enjoyed making it and plan to do it again in the future. A 5 star recipe at its finest.
