I found this recipe a bit disappointing. It was lacking seasoning and just tasted acidic. It was hard to taste the mint and avocado so maybe add more.

This made a tasty sandwich spread. I made a bunch of pita rollups with canned salmon and this stuff. I also dipped some veggies and more pita in it. Yum.

Yummo. Light and tasty. I drizzle a little evoo and lime juice on the top and garnished with mint leaf and a curly thinly sliced lemon and lime rind.
