Vichyssoise is a French soup that is served cold and is typically made with potatoes and leeks. Ingredients

  • 1 tablespoon butter
  • 1 leeks (chopped)
  • 1 potatoes (chopped)
  • vegetable broth
  • 1 avocado (pitted and peeled)
  • heavy cream
  • 1/2 lemon
  • 8 shrimp (peeled, deveined, and steamed)
  • salt

Directions

  1. 1Add the butter to a skillet and melt on medium heat. Saute the leek and potato for 5 minutes.
  2. 2Add the broth in and cook for 20 minutes.
  3. 3Add the avocado, a dash of cream, lemon juice, and half of the shrimp. Add salt as needed.
  4. 4Blend everything together and allow it to cool.
  5. 5Chop the remaining shrimp. Plate and add the shrimp on top.
