Ingredients

  • 1 tablespoon butter
  • 1 leek (chopped)
  • 1 potato (chopped)
  • vegetable broth
  • 1 avocado (pitted and peeled)
  • heavy cream
  • 1/2 lemon
  • 8 shrimp (peeled, deveined, and steamed)
  • salt

Directions

  1. Add the butter to a skillet and melt on medium heat. Saute the leek and potato for 5 minutes.
  2. Add the broth in and cook for 20 minutes.
  3. Add the avocado, a dash of cream, lemon juice, and half of the shrimp. Add salt as needed.
  4. Blend everything together and allow it to cool.
  5. Chop the remaining shrimp. Plate and add the shrimp on top.

The combination of avocado and shrimp really brought the flavor of this dish to life. It was very easy to make and did not require a bunch of ingredients. I loved this 4 star dish and plan to make it again next week.
