Avocado and Mango Salad

Ingredients

  • 2 red onions
  • 2 red chili peppers
  • 3 bunches arugula
  • 1 mango (ripe)
  • 1 avocado
  • 6 stalks cilantro
  • 3 tablespoons balsamic vinegar (light)
  • 2 tablespoons lemon juice
  • 5 tablespoons oil

Directions

  1. Peel onions, cut into rings. Clean and wash peppers, cut lengthwise, scrape out seeds. Cut peppers into thin strips. Cut mango flesh from the pit, peel and cut into thin slices.
  2. Wash and clean the arugula, and drain. Cut avocado in half, remove pit, scoop out flesh with a spoon, then slice each half of the avocado lengthwise. Wash cilantro, dry shake, pluck leaves from the stalks, coarsely chop.
  3. Mix the vinegar and lemon juice, season with salt, pepper and sugar, then slowly add the oil. Mix all ingredients and serve.
