  • 1/2 avocado
  • 1/2 cup black beans (drained and rinsed)
  • 1/2 cup tofu (cubed pan sautéed)
  • 3 mozzarella balls (mini marinated)
  • 2 tablespoons sunflower seeds (lightly salted)
  • 1 tablespoon scallions (or any fresh herbs, if you have them)
  • dressing (your choice, I used a squeeze of lemon and olive oil)
