Description

Avocados are a hearty vegetable that are packed with nutrients. People seem to either love them or hate them. But if you love them, then this recipe is worth the effort. Avocado Patties take 30 minutes to prepare and are 5 calories per serving. So feel free to have seconds, third, fourths, and more. This recipe combines the creaminess of avocado with rubust and aromatic spices for a decadence everyone will enjoy.

Ingredients

  • 1 avocado (ripe)
  • 1 onions (chopped)
  • 1 garlic cloves (minced)
  • 3 tablespoons fresh coriander (chopped)
  • 1 teaspoon coriander powder
  • 1 teaspoon ground cumin
  • 2 tablespoons all-purpose flour
  • 1 small eggs
  • salt
  • ground black pepper
  • olive oil (for frying)

Directions

  1. Cut the avocado in half, and remove seed.
  2. With a spoon, remove all the pulp. Place the avocado in a bowl, and mash with a fork.
  3. Add the remaining ingredients, and mix well.
  4. Heat a skillet with a little olive oil (not much is needed).
  5. When hot, add spoonfuls of avocado batter, and fry on both sides.
  6. If the dough is too runny, add a little more flour, it depends on the size of the egg and avocado used.
  7. Serve hot with steamed vegetables, a green salad, or a soup.
