Ingredients

  • 1 avocado (ripe)
  • 1 onions (chopped)
  • 1 garlic cloves (minced)
  • 3 tablespoons fresh coriander (chopped)
  • 1 teaspoon coriander powder
  • 1 teaspoon ground cumin
  • 2 tablespoons all-purpose flour
  • 1 small eggs
  • salt
  • ground black pepper
  • olive oil (for frying)

Directions

  1. 1Cut the avocado in half, and remove seed.
  2. 2With a spoon, remove all the pulp. Place the avocado in a bowl, and mash with a fork.
  3. 3Add the remaining ingredients, and mix well.
  4. 4Heat a skillet with a little olive oil (not much is needed).
  5. 5When hot, add spoonfuls of avocado batter, and fry on both sides.
  6. 6If the dough is too runny, add a little more flour, it depends on the size of the egg and avocado used.
  7. 7Serve hot with steamed vegetables, a green salad, or a soup.
