Really liked it! I had leftover homemade refried beans and added those inside the enchilada and they was fantastic.

Pretty tasty, especially depending on the type of enchilada sauce you’re using. For my sensitive stomach I would probably grill the onions ahead of time. But overall a winner and a great base to build on as well!

This was so good. Vegetarian and easy to make. I can’t believe the avocado tasted so good!! I was envisioning it tasting like warm guac. I had some rice handy and some kidney beans... so I added them to the enchiladas before rolling them up. Also used sweet onion instead of red.

Very good recipe! I especially liked the Home-made enchilada sauce! The ingredients on Yummly don’t match the recipe as it is written out though... example there is no beer in it.

This recipe was amazing and really turned out. I used queso fresco because that is what I had on hand and you did not miss the Monterey Jack a bit. I will for sure make this again!

DEEEEELICIOUS! I would honestly recommend making more of the avocado mixture, because between 1 vegetarian & 1 person adding chicken to theirs, we were short at the end! BUT IT WAS DELICIOUS

Yummy! Pleasantly surprised! Was trying to use a bunch of avocados that were about to go bad - I'm so glad I tried it. I made my own family enchilada sauce so can't speak to her recipe

just ok. needed more flavor. learned my lesson of using ingredient list as a shopping list. not until i looked at recipe did i realize home made enchilada sauce was intended. canned version was pretty bad

This recipe was fantastic! These tasted like guacamole enchiladas which was exactly what I wanted last night
