This recipe takes a little bit of attention to detail and a lot of patience to make. Thin slices of avocado are layered and rolled together to form a cannelloni-like shape filled with a bold mixture. The filling is made from a combination of shrimp, turkey, and mayonnaise for a filling and creamy element. Since avocado is used in place of what would typically be pasta, this dish is not only high in healthy fats but also low in carbs for a light but filling meal.

Ingredients

  • 1 tablespoon vegetable oil
  • 200 grams shrimp
  • 100 grams turkey
  • 2 tablespoons mayonnaise
  • salt
  • 1 avocado

Directions

  1. Add the oil to as skillet on medium heat. Add the shrimp and turkey and saute for 3 minutes. Remove from the heat and set aside.
  2. Once cool, mix with the mayonnaise and a pinch of salt and place into the refrigerator.
  3. Cut a piece of plastic wrap and place it on top of a cutting board. Thinly slice the avocado, make the slices even and about the same size.
  4. Place the slices in a row, making them overlap. Cut another piece of plastic wrap and place it over the cannelloni and flip it over. Remove the top plastic wrap.
  5. Stuff the cannelloni, being careful not to put too much stuffing.
  6. Roll the cannelloni with the help of the plastic wrap. Once it is rolled, place in the refrigerator for an hour.
