  • 4 greek yogurts (plain)
  • cinnamon (to taste)
  • 1/2 cup quinoa

  • 4 apples
  • 4 tablespoons brown sugar
  • 50 grams butter (small pieces)
  • 1 teaspoon ground cinnamon
  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 25 grams butter
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup walnuts (coarsely chopped)

Directions

  1. Rinse the quinoa and place in a saucepan with 1 cup of water.
  2. Bring to a boil, cover the saucepan, and simmer for 10-12 minutes. When done, wait a few minutes, then fluff with a fork. Add a pinch of cinnamon and mix. Place on a plate to cool completely.
  3. To prepare the caramelized apples, peel and cut the apples into 1-2 centimeter cubes. Place in a large nonstick frying pan and add the sugar, cinnamon, and butter. Bring to a boil on medium heat. Lower the heat and simmer for 5 to 10 minutes, until the apples are slightly tender and the sauce is caramelized. Reserve in a bowl.
  4. For the crumble, preheat oven to 400°F.
  5. Mix all ingredients in a bowl with your hands until you get a wet sandy mixture. Spread the crumble on a baking sheet lined with parchment paper and bake for 10 to 15 minutes until browned and crispy. Stir every 5 minutes to prevent burning.
  6. To serve in cups, first place a layer of yogurt, followed by a layer of quinoa, and then a layer of caramelized apples. Repeat the layers and serve with the crumble on top.
