    Very good, i used pancetta and ate this for 2 days straight over the weekend. I will need to use a bigger pan next time to help keep everything together easier. Also going to try a different noodle like linguine or bucatini to see if I like that better

    Excellent recipe! Our own version of Carbonara is to add 3/4t of Red Chili Pepper flakes, about a 1/2c more Pasta Water and just before bringing all ingredients together toss 1c of Small Peas (petits pois) into the wok or skillet. Adds a bit of veg, and colour!!
