  • 2 1/2 cups all purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 pinch salt
  • 2 cups sugar
  • 2 large eggs (at room temperature)
  • 1 1/3 cups Greek yoghurt (at room temperature)
  • 1 stick butter (melted and cooled)
  • 2/3 cup boiling water
  • 1 teaspoon instant coffee powder (or ½ tsp of espresso powder mixed in with the boiling water, optional but recommended to accentuate the cocoa flavour)
  • 1 teaspoon vanilla extract
  • 500 grams cherries (whole, approx 80, pitted)
  • 1/2 cup kirsch (or any other cherry cherry brandy, non alcoholic wine is a good substitute)
  • 1/2 cup sugar (alternatively you can sweeten with a couple of tablespoons of maple syrup or date syrup which I used in this recipe)
  • 100 grams dark chocolate
  • 1/2 cup cream (thickened, heavy)
  • 500 grams cream cheese (at room temperature)
  • 8 tablespoons icing sugar
  • 2/3 cup heavy cream (at room temperature)
  • 1 teaspoon vanilla extract
