Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon brown sugar
  • 2 bunches asparagus (trimmed and cooked)
  • 5 ounces salmon fillet (cooked and flaked)
  • 8 cooked shrimp (peeled and deveined)
  • 4 ounces baby spinach leaves
  • 1 avocado (peeled, pitted and sliced)
  • 1 cucumber (small, cut into ribbons)
  • 4 ounces snow peas (trimmed)

Directions

  1. For the dressing, whisk oil, lime juice, vinegar and sugar in a small bowl until well blended. Season to taste.
  2. Toss asparagus, salmon, shrimp, spinach, avocado, cucumber and snow peas in a large bowl. Add dressing; toss to coat.
