Asparagus with Crisp Prosciutto and Citrus Hollandaise

Ingredients

  • 2 tablespoons olive oil
  • 3 ounces prosciutto
  • 7 ounces asparagus spears (thin)
  • 2 cloves garlic (peeled and finely sliced)
  • 6 tablespoons hollandaise sauce (ready-made)
  • 1 orange
  • ciabatta bread (Toasted, to serve)

Directions

  1. Heat 1 tbsp oil in a skillet. Add prosciutto; cook for 30 seconds on each side until crispy. Drain on paper towels. Keep warm. Heat remaining oil in pan; sauté the asparagus and garlic for 3 minutes until lightly golden.
  2. Mix the Hollandaise with the orange zest. Divide the asparagus, garlic and prosciutto between 6 plates; drizzle with Hollandaise. Garnish with a freshly ground black pepper. Serve with toasted ciabatta bread.
